In the "England & Wales, Civil Registration Birth Index", there are 16 Sarah Wilkinsons born in 1863 that could possibly be her, and zero Nellie Wilkinsons.
11 just "Sarah" and 6 "Sarah" with a middle name starting with "E".

1888-4th quarter (Oct-Dec): Sarah, using the name "Nellie", married Albert Harry Staddon at Maidstone, Kent, England.

1906 or 1907: Arrived in Canada with husband & family, according to her husband's entries in the 1921 and 1926 Canadian Censuses.

Between arrival in Canada and her death, she and her husband do not appear in any Canadian Census, or at least, I (Bruce), cannot find them, and believe me, I've spent hours looking.

1918-Mar-16: Sarah died in her home 15 miles northeast of Empress, Alberta, Canada, so in Saskatchewan. Unable to find in AB or SK Death Registers.

Sudden Death of
Mrs. A. H. Stadden
     ---
     On Saturday morning, March 16, Mrs. Stadden, passed away suddenly at her home fifteen miles north-east of Empress. She had been in her usual health until about half-an-hour before her death when she was seized with faintness from which she never recovered, death being due to heart failure. Mrs. Stadden was a woman of excellent qualities, and was most highly respected and beloved by all who knew her. She leaves to mourn her loss a sorrowing husband and three daughters to whom the sympathy of the community is extended. The funeral was conducted on Tuesday, by the Rev. G. G. Pybus, and was largely attended, interment taking place at the Empress cemetery.
